Simple Chocolate Chip Banana Bread (gf)

Rae’s Simple Banana Bread:
When life gives you bananas, make banana bread. Avoid putting your overripe bananas in the bin with this simple banana bread recipe.
To begin, mash the bananas until there are no discernable lumps. Add the lemon juice and mix together. Next, add the vegetable oil and brown sugar and mix until well combined. Then add the eggs and vanilla extract and whisk together until smooth and set aside.
In a separate bowl combine the gluten-free flour blend with the baking powder. Then preheat the oven to 350 degrees fahrenheit or 180 degrees celsius. Add the dry mixture to the wet mixture and mix until well combined. Now, set aside a few chocolate chips and add the rest to the batter.
Grease the bottom and sides of the bread tin, or tins if you’re making mini loves, with oil. Add the batter to the tin(s) and sprinkle the remaining chocolate chips evenly on top. Bake for approximately 60 minutes, checking periodically in the last 10 minutes with the knife test–sticking the knife, blade down, in the center of the bread and pulling straight out. If the knife is clean then the bread is done. If it is not, continue baking for 1-3 minutes and check again. Once the bread is done, allow it to cool completely before serving.

Ingredients:
3-4 ripe bananas
⅓ cup of vegetable oil
1 T lemon juice
¾ cup light brown sugar
2 eggs
1 T vanilla extract
2 cups of gf flour with xanthan gum
1 t of Baking powder
1 cup semi-sweet chocolate chips
Tools + Equipment:
Oven
9 inch bread tin or three 6.29 inch tins for mini loaves
Mixing bowl
Whisk
Spatula
Measuring cups and spoons
Instructions:
1. Prepare your wet ingredients:
Mash the bananas + mix with lemon juice
Add the vegetable oil and brown sugar
Next add the eggs + vanilla extract
Whisk together
2. Prepare your dry ingredients:
Combine the gluten-free flour with the baking powder
Preheat the oven to 350 F or 180 C
3. Combine wet and dry:
Add the dry mixture to the wet mixture
Mix until well combined
Add chocolate chips (set aside a few chocolate chips to add to the top)
4. Bake
Grease the bread tin(s) with oil
Add the batter to the tin(s)
Sprinkle the remaining chocolate chips evenly on the top
Bake for approximately 60 minutes
