Rae’s Simple Chocolate Peanut Butter Cups

Nothing goes together like peanut butter and chocolate. This simple chocolate peanut butter cup recipe is the perfect sweet treat to satisfy your cravings. And it’s gluten free!

Start by lining your cupcake pans with cute paper cupcake cups. This time, I chose some fun pink zebra stripes to add a pop of color to my baking! Feel free to get creative with your cup choices—making your treats visually appealing is half the joy!

Now, let’s work on that delicious bottom layer of chocolate ganache. Grab a saucepan and add one tablespoon of coconut oil. Set the heat to medium and let the magic begin! As the oil melts away, the aroma will start filling your kitchen—it's a lovely prelude to the sweet masterpiece you’re creating.

Once the coconut oil is fully melted, it’s time to add in one cup of chocolate chips. Pour those little morsels in and stir them together with the oil. Keep mixing until the chocolate is perfectly melted and has blended beautifully with the coconut oil.

Next, pour the chocolate into each paper cup, making sure to distribute it as evenly as possible so that every bite is deliciously chocolatey! Give your pan a gentle shake back and forth. This will help create a smooth surface on your chocolate layer and help eliminate any pesky air bubbles. Put in the fridge for about an hour or until the chocolate sets.

Remove the chocolate from the fridge and let's get started on assembling those delightful cups! Take about an ounce of the peanut butter filling and gently mold it into a disk in your hand. Once it’s nice and firm, place that disk right on top of one of the chocolate layers, pressing it down gently to bond the two together. It’s like a little hug for your chocolate! To create the top chocolate layer of our cups we are going to repeat the first part of the process. Add one tablespoon of coconut oil to your saucepan. Set the heat to medium and allow the oil to melt completely. Mix in the rest of your chocolate chips until your chocolate is completely melted and well combined with the oil.

Now for the fun part! Pour the chocolate, distributing evenly, over every layer of peanut butter. Once each cup has been topped with a layer of chocolate, gently shake the pan back and forth until a smooth surface is achieved. Next, top each cup with a few salt crystals and return to the fridge to chill.

Chocolate ganache

  • 2 cups semi sweet chocolate chips

  • 2 T coconut oil

  • ½ t salt

Peanut butter filling

  • 1 cup smooth peanut butter

  • 1 ½ cups almond flour

  • ¼ cup maple syrup

  • 1 t vanilla extract

Tools + Equipment:

  • Fridge

  • Stove top

  • Saucepan

  • Cupcake pan

  • Paper cupcake cups

  • Spatula

  • Mixing bowl

Instructions:

1. Prepare the first chocolate layer

  • Line your cupcake pans with the cupcake cups

  • Add the 1 T of coconut oil to your saucepan + melt completely

  • Add 1 cup of chocolate chips + melt together

  • Pour chocolate into each cup (distribute evenly)

  • Chill in fridge

2. Prepare peanut butter filling

  • Add peanut butter to mixing bowl

  • Add maple syrup + vanilla + mix well

  • Add flour + mix well

3. Assemble cup

  • Remove chocolate cups from fridge once set

  • Distribute peanut butter layer evenly

  • Press firmly

  • Repeat step one to add the top layer of chocolate

  • Sprinkle with a pinch of salt

  • Chill in fridge until set

  • Enjoy!
